One-Sheet Pan Salmon Delight (Serves 2)
Ingredients
2-3 salmon filets (depending on size)
3-4 carrots, peeled
6 fingerling potatoes
1 head of garlic, cut in half
7-8 brussels sprouts
1-2 tbsp Olive oil
Salt and pepper to taste
Chili crunch oil for drizzling (optional)
For sauce
1 cup plain Greek yogurt
1 tbsp water
1/4 tsp Cumin
1 tbsp fresh lemon juice
Salt and pepper to taste
Steps
Gather your ingredients: fresh salmon fillets, vegetables of your choice, and a selection of spices. Toss the veggies in some olive oil, enough to coat.
Preheat your oven to 400F, line your sheet pan with parchment paper for easy cleanup, and arrange the salmon and vegetables in a single layer.
Drizzle with olive oil, sprinkle with your seasoning of choice, and let the oven work its magic.
Roast for 30 minutes. Keep your eye on it because usually I have to remove the salmon first and let it rest while the veggies finish roasting.
While the sheet-pan is in the oven, prepare the yogurt sauce. In a bowl, combine the yogurt, cumin, lemon juice, and salt and pepper to taste. That’s it!
To assemble, put about 1/2 cup of the yogurt sauce, top with the salmon fillet and the place the veggies around it. You can then drizzle with the chili crunch oil or some of the yogurt sauce.
