Do you ever have days when all you want is a big gigantic, beautiful salad? I do! Strangely, while I am on a plant-based diet, I don’t eat many salads, probably because it was winter. Now that spring is here and with summer officially approaching, my taste buds tend to crave salads, which is great because they fill me up pretty good. This salad I am sharing is pretty simple— lots of greens and a killer dressing— and it is so good! And the ingredients on this salad are packed with nutrients, especially the microgreens, which can be up 40 times more potent in phytochemicals than their mature counterparts and is a beneficial powerhouse against many diseases like cholesterol or ailments like indigestion and gut health (Miller, 1). Quick and simple is what I love, and this salad delivers! Enjoy your week!
Ingredients:
1-2 cups of romaine lettuce
1 cup green red lettuce
1/2 cup microgreens
1/2 cup sunflower shoots
2 cups of romanesco broccoli (raw)
Your favorite dressing. I love the Whole Sisters Dump Ranch dressing and it is O.M.G. delicious. I vary the flavor by adding different spices or veggies to change the flavor.
Steps: Combine everything is a bowl, add dressing, toss until well coated and serve! Enjoy!
