Baby Bella, Garlic, and Bok Choy Ramen Soup Recipe
Ingredients:
4-5 garlic cloves, sliced
6 cups vegetable broth (or water with vegetable bouillon)
1 lb bok choy, chopped (both leaves and stems)
8 oz mushrooms, sliced (shiitake or cremini work well)
1-inch piece of ginger, peeled and minced (optional, but adds a nice depth)
1-2 tbsp soy sauce or tamari (for gluten-free option)
1 tsp rice vinegar or lime juice (optional, for added brightness)
1/4 tsp black pepper (or to taste)
1/2 tsp red pepper flakes (optional, for a bit of heat)
4 oz noodles of your choice (soba, rice noodles, ramen, or even rice vermicelli work well)
Instructions:
Slice the garlic and ginger (if using), chop the bok choy, and slice the mushrooms.
In a large pot, pour in the vegetable broth and bring it to a boil over medium-high heat.
Once the broth is boiling, add the garlic and ginger. Lower the heat and simmer for 2-3 minutes to infuse the flavors.
